Easy, Make Ahead Recipe

This easy hash brown casserole recipe will help you have a hearty, hot breakfast each day of your stay without any ‘muss or fuss.’ It’s so versatile, you can make-and-bake the night before and warm up individual servings; make and refrigerate overnight to bake in the morning; or spend 15 minutes cooking and assembling when you wake up. Serve a Sweet Fruit with Your Savory Breakfast Casserole

Hashbrown Breakfast Casserole
8 Servings

Ingredients
20 oz. Shredded Hash Brown Potatoes, Thawed
1 lb. Sausage
¼ c. Onion, Diced
½ Red Bell Pepper, Diced
½ Green Bell Pepper, Diced
8 eggs
1 12 oz. Can Evaporated Milk OR 1 1/3 cups Milk
½ tsp. Italian Seasoning
2 c. Shredded Cheddar Cheese

Instructions
Preheat oven to 350°F
Brown, crumble and drain sausage.
Dice peppers and onions.

In a bowl, whisk eggs, milk, and Italian seasoning until smooth.

Spread hash browns in a 9 x 13 baking pan and top with sausage, vegetables and 1 1/2 cups of cheese. Pour in egg mixture and top with remaining cheese.

* Bake 55-65 minutes or until a knife inserted in the center comes out clean. Salt & Pepper to Taste

* If casserole is refrigerated overnight, remove from the fridge about 30 minutes before baking.  Your dish may take a little extra time to cook through.

Notes
If making ahead of time, cover tightly with tin foil or plastic wrap and refrigerate for up to 48 hours. After the casserole is baked, individual servings can be frozen for up to four months.
